Taste of the Karoo lamb comes from selected farms in the Cradock and Graaff-Reinet environs. If you were to visit one of these farms (and you are most welcome to) there is a good chance that you would not see the skapies. Reason being our lamb is all veld raised in the wide open spaces of the Karoo where they feed on Karoo bossies for the duration of their life. Unlike many, we do not succumb to the commercial pressure which results in pasture raised animals which are fattened at feedlots, albeit that they may come from the Karoo. We also take the time to hang our lambs properly for at least 5 days before preparing to order. This enhances the texture of the meat dramatically and whilst this may result in some weight loss, we believe it to be well worth the improvement in the flavor. In terms of lamb options we offer the following choices: Firstly, the more typical 6-10 month lamb - tender, juicy and readily available. Secondly the farmers favorite - the so-called "twee tand" or hogget. Think of these as more mature lambs that have been feeding on Karoo bush for between 12 - 18 months. Richly infused with flavor the meat is somewhat firmer - a treat to be sure and more limited in supply. Our third offering is mutton - which is a sheep of at least 2 years old. For the real taste connoisseur - full of flavor and just needs to be hung for at least a week to ensure an acceptable degree of tenderness.
