250g of moist, thinly sliced Taste of the Karoo biltong
125g feta cheese, cubed
1 papaya, sliced
100b bean sprouts
1 frilly lettuce
1 bunch rocket
30ml chopped spring onion
30ml fresh parsley
30ml fresh oregano
5ml mustard powder
100ml white wine or cider vinegar
200ml olive oil
2 cloves garlic
Salt and pepper to taste
Place ingredients for vinaigrette in a liquidizer and blend.
Pour half over biltong and refrigerate until required.
Compose a decorative salad platter of individual plates layering the salad ingredients and sprinkle lightly with dressing.
Place the marinated mixture on top and serve.
